Filleting Unit

VMK11

The VMK11 Filleting Unit is designed for processing pelagic fish and can produce either butterfly fillets, two single fillets or perform a bellycleaning using a brush and grindstone, leaving the bones intact. Products exit the unit via a chute in the end of the unit while waste exits through a dedicated waste chute.

The VMK11 is not a standalone machine and requires VMK16 or VMK18 to function as intended.

Deheaded and tail cut fish (tail-on is possible), belly opened and mechanically gutted.

Butterfly Fillets

Deheaded and tail cut fish (tail-on is possible), belly opened, mechanically gutted and deboned.

Single Fillets

Deheaded and tail cut fish (tail-on is possible), belly opened, mechanically gutted and deboned. Dorsal fin removed.
